    Steak Salad

….that’s what we had for dinner , on this quarantine day who knows what day it is already … 🤷 I chose something easy and doesn’t make me feel bloated . Salad dinner is always a good choice . The protein source is sirloin steak , sometimes I choose chicken or shrimps or scallops . Scallops is one of my favorite ! My hubby grilled the steak , we don’t eat steak that often at all . We used to but it’s been years since we cooked it ourselves . I added some dressing on my plate which works really great with this steak . Not much to do with…

    Enchilada Soup

…in slow cooker ! How about that ? Didn’t feel like cooking much or making too much mess , slow cooker sounds good , right ? Less dishes to do and we can just ignore it ! And important thing is , it’s healthy ! Very macro friendly , good amount of protein and nutritious from the beans and tomatoes , the corn , not so much , I like sweet corn , you can always skip if you don’t care . My family really enjoys this soup , esp when the teenager himself had three cups of this soup , you know it’s good .  Ingredients : 5…

    100% Sourdough Milk Sandwich Bread

This one recipe is awesome , credit goes to Barry Apek .I got the recipe from him . This sandwich bread has become our favorite in the house . My husband and son rave about it and that they like this the most . I say …does that mean I’ll have to bake again this week ? Absolutely ! The bread I made two days ago and mind you it’s in a large Pullman loaf so normally it’d last us for a week or at least 5 days . Not this one … They’ve been using it for toasts , for sandwiches for open face sandwich .. it’s so versatile…

Did somebody say Sourdough Babka ?

Babka is one our favorite sweet bread . My husband’s favorite actually ..although we both didn’t grew up eating this kind of sweet bread . But one year I was intrigued with this Babka , Chocolate Babka to be exact , after watching an episode of Seinfeld . My go to Babka recipe is from Peter Reinhart’s Artisan Bread Everyday . I have never tried any other recipe . I made them plenty of times over the years and it’s always been my husband’s favorite sweet treat. Lately with the quarantine , social distancing thing , I find myself to be busy daily in the kitchen . Experimenting some new…

    Sausage & Rotini

Years ago when I used to cook a lot of comfort food , this was our go to . Easy , straight forward and quick , delicious dish. I actually forgot about this , until few weeks ago my son mentioned about it . So it’s been couple times in the past two that I made this yummy dish for our dinner . Recipe was actually from Jamie oliver cookbook , back when I used to buy a lot of cookbook , I have about 7 books just from Jamie Oliver 🤣 really like his recipes . The recipe below is not the way he did it but I did…

    Campfire style chicken pocket

This was an easy , quick and pretty much with ingredients you have in pantry . Who doesn’t like that ? Not much mess , yummy and quick . Of course I used chicken breast , boneless and skinless , best way to hit protein , the carbs coming from all the veggies which is healthy and nutritious . Overall this dish is pretty healthy , and low fat . The vegetables I used are onion , yellow and orange pepper and then and I threw in some cherry tomatoes . The spices obviously is up to you , you can even use taco seasonings from store . I had…

    Dirty Rice

When you don’t feel like cooking too much of anything and one skillet meal is a good choice . That’s what I did . This turned out to be a very cheap meal . I got turkey on sale , was only $1.39 . Unfortunately I don’t have the exact measurements for spices . Ingredients : 140 g uncooked brown rice , to be cooked separately until almost done 180 grams , about large yellow bell pepper 200 grams onion 3 cloves of garlic 8 oz baby Bella mushroom 14 oz diced tomatoes Garam masala Coriander Cumin Smoked paprika Salt , pepper Chicken bouillon cube Olive oil 1 lb lean…

    Southern Oven Fried Chicken

When you’re hungry for fried chicken yet you can’t get out , and not willing to make a huge mess with deep frying , this is a good option to satisfy that hunger . I don’t do deep frying on a lot of things . First , because it’s a messy business . Second , it uses a lot of oil and to me that’s a lot of oil to be wasted . And third it’s because it’s too fattening . Maybe the third reason should be the first ..lol whatever .. Oven fried chicken I easy and quick to make . I usually use the other recipe using cornflakes…

    Reviving my dormant starter ..

Last year in the spring , I thought , why not trying to dry the starter , just to see .. and incase anything happen to my starter , yeah it’s like insurance type a thing . Just incase . At the time I had no clue how to revive it .. all I cared was just having insurance incase anything happens to the starter . So last spring after feeding Ben&Jerry , I spread some on thin layer on a parchment paper to dry . I think it took a day or something to totally dry , it depends how thin it is . But that’s all I did…

My sourdough bread adventure continues ..

Thought I’d put together some picture instructions on my sourdough bread adventure . In my previous post I mentioned I fed my starter with equal ratio of flour . For example 25 grams of starter fed with 25 grams water and 25 grams of four . To make one boule actually you don’t need that much of starter . And you don’t have to feed the whole batch of starter every time . Just take out what you need , that way you won’t waste so much flour . Unless you’re like me , you like to use discard for other things. Anyway .. I fed my starter about 7…

    Chicken & Vegetables Stir Fry

Growing up I had this dish a lot. My mom would make this often . She was a good cook . And was an amazing mother . She was like my best friend , of course it was only the two of us always after my parents divorced when I was 11 . My mom always offered to teach me how to cook but I always refused that idea . I don’t know how many times I regret it now . Anyway back to stir fry , we also call this Cap Chay . Basically you can use any kind of protein you have , pork , chicken or shrimp…

    Homemade Tortilla Shell

Well , when you’re hungry for tacos but yet you can’t and don’t want to go out to grocery store for unnecessary item , and taco shell is kinda essential for dinner if we want tacos , you ended up making tortilla shell from scratch . It’s actually not that hard at all . It’s better if you have someone helping you . My husband was in the kitchen with me tonight ( every night actually , he always helps ) , so while I’m rolling the dough , he’s in charge to cook the dough , which took literally seconds from start to finish for each shell . It’s…

    Sourdough Hybrid Sandwich Bread

I found myself feeding Ben & Jerry quite often these days . For those of you wonder about Ben & Jerry , they’re not the ice cream maker , they’re my sourdough starter . So , ever since i started staying at home almost 4 weeks ago , I feed them regularly and more often , in attempt to use less yeast ( admit it , I still love using commercial yeast , it’s easy , quick n yield a good bread still ) and to get more discard to use it to make garlic parmesan crackers which is super addictive !! I’ll save that for another entry. I haven’t…

    Pierre Chicken

I didn’t used to be a fan of chicken breast . I think it all changed three years ago , I made the switch from thighs to breast ..😂 I still love the flavor of thighs tho but after weighing which gives me the most benefit , I opt for chicken breast . Why ? Because they’re lean meat , hardly any fat , and high in protein . Thigh is also high in protein but because they’re dark meat , they contains higher fat , a lot higher than the white meat . And I absolutely love the skin .. so not a good idea for me . But…

    My kind of Overnight Oats

This social distancing thing makes it so hard to be on track with macros . With my love for cooking and baking , it gets harder and harder to stick with the plan . I haven’t had to do mealplan for a while now because my husband gets to come home for lunch and now he’s working from home ( which I’m thankful for !!! ) This past week I baked too much , which means we’ve been eating them too . There’s no food left behind in this household is taking full effect right now . Which means , leftovers get to be eaten unless they’re bad .. then…

    Pierre Chicken

One of the most flavorful chicken breast recipe is this one . I usually not a big fan of chicken breast , until I learned years ago as long as you have meat thermometer you won’t end up with dry chicken breast . Still if I had my choice , I’d prefer chicken thighs . Although this was good , so who needs chicken thighs ? Ingredients 900 grams chicken breast , boneless skinless , sprinkle with salt n pepper 35 grams all purpose flour 8 grams of olive oil 1 14 oz can diced tomatoes 1/2 cup of water 100 grams sliced onion 3 cloves of garlic 2 tbsp…

    My Sourdough Adventure

First off .. as of early last month it was hard to find flour or yeast.  I remember the comment I made was ” what’s this ? Suddenly everyone turn to be a baker ? ” But anyway .. yesterday morning after feeding my 5 years old starter , I decided maybe I’ll bake sourdough with it . I used Ken Fork method . Have to say I had fun making it . It has been six months since the last time I made it . So I wasn’t even sure but I thought heck I got plenty of time not going anywhere , so why not … This method…

    Philly Cheesesteak

Before all this social distancing thing , there’s one place that my husband likes to take us for good sandwiches . They’re a couple from New York and they moved here in Knoxville and opened a small restaurant / middle eastern grocery store . I usually have Gyros when we go there , my hubby’s favorite is Philly Cheesesteak . After a while I thought that couldn’t be hard to make yourself . So I bought this skirt steak , n I happened to look what to do with it . Turned out they can be used for this sandwich . I made sure I slice them as thin as…

    Oatmeal cookies

18 cookies , 25 grams each 86 calories , 16C 2F 2P I love oatmeal cookies , unfortunately the oatmeal cookies usually are really not macro friendly . So here’s my version of chewy oatmeal cookies that we can all feel good about , after all oats are good for our health ! In this recipe , which is super easy , no mixer required . Just use the wooden spoon , it’ll look a bit dry at first but don’t rush to add liquid to make it set , just keep mixing with the spoon until it’s pretty much mixed . Also , you can always replace the brown…

    Banana Oats Muffins

We used to make this quite often , I made this recipe about 3 years ago when we started switching our focus to a healthier food. I would take this for breakfast on the go , bagged it n ate it after I dropped off my son to school . My husband likes them with yogurt too . Or just as a snack . The macros in this isn’t too bad in my opinion . If you’re on keto , this recipe probably won’t work for you . Trying to make it healthier option , I opted for old fashioned oats . I don’t buy oat flour , I just…
