Creme Brulee

1 cup of heavy milk

1 cup of milk

1/4 vanilla beans or 1 tbsp. vanilla extract

3 egg yolks

1 whole egg

1/4 cup of sugar

1. Preheat oven to 325 F , prepare 4 ramekins in 9×13 pan , surrounded with hot water .

2. In a small pot , scald heavy cream and milk and vanilla ( bubbles around the edges )

3. In a mixer with paddle attachment , beat eggs and sugar , once the milk mixture is done , pour with a constant stream into the egg mixture .

4. Pour into the prepared ramekins , bake about 25-27 minutes , until the middle still jiggles when being tapped .

5. Remove , let it cool , refrigerate , when ready to serve , sprinkle with sugar on top and use the torch to burn the sugar .
