Creme Brulee

1 cup of heavy milk

1 cup of milk

1/4 vanilla beans or 1 tbsp. vanilla extract

3 egg yolks

1 whole egg

1/4 cup of sugar

1. Preheat oven to 325 F , prepare 4 ramekins in 9×13 pan , surrounded with hot water .

2. In a small pot , scald heavy cream and milk and vanilla ( bubbles around the edges )

3. In a mixer with paddle attachment , beat eggs and sugar , once the milk mixture is done , pour with a constant stream into the egg mixture .

4. Pour into the prepared ramekins , bake about 25-27 minutes , until the middle still jiggles when being tapped .

5. Remove , let it cool , refrigerate , when ready to serve , sprinkle with sugar on top and use the torch to burn the sugar .

Fruit Cake

When i was young , my mom loved to bake fruit cake . No , it’s not the kind of fruit cake that americans know , it’s not those kind of fruit cake where you can let it sit for weeks .. not that kind . To me , this is more like butter cake with raisins and fruit glazed . But my sister still called it fruit cake . Mom used to bake this with her mini oven , not oven with stove like i have right now , but back then , my mom didn’t even have that big oven , it was the kind of oven that has cord plugged into the outlet , and it has the lid where you can take it on and off . It’s a very old style one ..

Anyway , this christmas , i miss that fruit cake , so i asked my sister for the recipe , she gave it to me and i am trying it right now . The smell reminds me of my mom when she was busy making this cake !! I really wish she’s here , she would have been so amazed with all this christmas decorations , the snow , the people , the food that we make .. Hopefully this cake turns out good ..

1 stick and 5 Tbsp. of unsalted butter , softened , room temperature

187.5 grams of sugar

pinch of salt

4 eggs

1 tsp. of vanilla extract

200 grams of all purpose flour

150 grams of raisins , spirnkled with flour so they won’t sunk

Preheat oven to 359 F ,

Cream the butter about 1 minute medium speed , then add sugar little at a time , mix until sugar blended well . Then add your eggs one at a time , and then addthe vanilla extract , salt , and then all purpose flour . Lastly add your raisins , bake for 50-60 minutes in a loaf pan lined with parchment paper .

 

 

My sister’s fruit cake

Make 2 loaves of fruit cake .

375 gr. of unsalted butter

375 gr. of sugar

7 large eggs

1/2 tsp. of baking powder

400 gr. of all purpose flour

200 gr. of raisins soaked in rum

100 gr. glazed fruit

1. Preheat oven to 350 F , grease and line with parchment papers .

2. Beat butter for 1 minute , then add sugar , beat until light and fluffy . Add egg 1 at a time , beat well after each addition , add flour and baking powder , little at a time , beat well after each addition too .

3. Add in the raisins , drain from the rum , just use 1-2 tsp. of the rum into the batter , add the glazed fruit . Bake for 50 minutes or until tooth pick comes out clean .

Beef , Shiitake Mushroom and Broccoli Stir Fry

1 lb of flank steak , sliced against the grain , about 1/4 inch thick

1/2 bunch of green onion , thinly sliced , including the green part too

1 tbsp. of minced ginger

2 tbsp. of minced garlic

1/4 cup of oyster sauce

In a ziploc bag put all these ingredients together , mix well , let it sit in the fridge for at least an hour . I put mine about 3 hours .

1 head of broccoli

Boil water in a wok , once it’s boiling , blanch broccoli that has been cut and washed for about 30 seconds , drain , and put broccoli into a large bowl with cold / ice water , to stop the cooking . Remove broccoli once it’s all cooled down .

1 lb of shiitake mushroom , slice 1/ 4  inch thick .

1 cup of chicken broth

1 tbsp. cornstarch mixed with 2 tbsp. water

Once you are ready to cook :

1. Heat vegetable oil in a wok , medium high heat , stir fry shiitake mushroom for 2-3 minutes , season with salt pepper . Remove into a platter .

2. Add oil , add half of the beef , stir fry for 5 minutes , remove to a plate with the mushroom . Do the same with the rest of the beef , once it’s done , add the mushroom and beef from the platter into the wok. Add broccoli and chicken broth , cook about 2-3 minutes .

3.Add cornstarch mixed with water to make the sauce thicker .

Beef , Shiitake Mushroom and Broccoli Stir Fry

Tonight i made this stir fry which was pretty much a quick meal . I served it with jasmine rice . Marinating the meat , i used flank , marinating the meat with green onion , ginger and garlic , along with oyster sauce , and let it sit in the ziploc bag for about 3 hours . It was very easy and delicious .. i really enjoy this kind of quick meal .. it has the protein you need , and also the carb , vegetable source .. everything . It was like a complete meal in one wok !

Rice Pudding

Few weeks ago while i was finishing up with my work out at the gym , a friend of mine ,  named Rose , came by and we had a chat . Little did i know that she just turned vegetarian since 5-6 months ago , then we ended up talking about rice , how much we both love rice . Except i don’t like brown rice , while for her , that’s all she eats ! Then she ended up telling me about how good this rice pudding was , and told me if i liked rice , coconut milk , i probably would love this rice pudding .

Just last week we met again , and she had recipe in her bag and gave it to me , the recipe of rice pudding . I decided to try it that night when i got home , and while the boys were away for swimming lesson . Turned out it was very easy and delicious . It reminds me of indonesian dessert called Ketan , except they use sticky rice , and coconut milk later on , not while cooking it . I love this rice pudding , very delicious . Although Rose told me she likes to put nutmeg in there , i don’t think i like nutmeg in cookies or any kind of dessert . To me , nutmeg belongs to cooking stuff .. not baking .. LOL That’s just the way i was raised i guess .. i always had nutmeg for soup .. but not cookies . While people here using it the other way around ..

Rose’s Rice Pudding


3/4 cup of white rice

1/4 tsp. salt

2 cups of milk

1 can 15 oz. of coconut milk

1/4 cup of sugar

1/2 tsp. of ground ginger

1/4 tsp. of ground cinnamon

1/2 cup of raisins

1. Combine rice and water , bring to boil , simmer about 15 minutes or until the water almost dissolves .

2. Add milk . coconut milk , ginger and cinnamon , sugar , cook , stirring often , about 35 minutes , until rice is done and creamy . Add raisins 5 minutes before final cooking time .

Chinese Style Noodle Soup with Shrimp

1/2 lb of angel hair pasta

2 quarts of chicken broth

1 lb of shrimp

1 carrot , match stick cut

2 bunches of green onions , including the green part , separate the white and green

1 tbsp. of thinly sliced ginger

2 tbsp. soy sauce

1 tbsp . of sesame oil

1. Cook the noodle according to package to al dente , drain , remove the noodles into a big bowl filled with cold water and ice cubes to stop the cooking . Let it sit until noodles are cool . Once it’s cool , drain again , sprinkle some oil , so it won’t stick .

2. In a pot , add 2 tbsp. of canola oil , once it’s hot , add the ginger , green onion and also the green part , leaving about 1/2 cup left to garnish the soup later . Cook about 1 minute , keep stirring , add the 2 quarts chicken broth , bring it to boil , simmer for 5 minutes . Add the shrimps , noodles , soy sauce and sesame oil . Cook , simmer for 3 minutes , not too long or else your shrimp will be too rubbery .

3. Serve in a bowl and garnish with green onions.

Holiday cookies


I guess i had just started my holiday baking cookies .. Okay , it started with the chocolate hazelnut cookies , which i think is so delicious !! So nutty .. and not to mention i am a big fan of hazelnut .

So , yesterday during bad weather day , we had a blizzard condition , although we ended up with only couple inches of snow , the wind was brutal !! Snow drifts were high , anyway , me and my son ended up baking cookies . Butter knot cookies , has a texture like pineapple cookies from Indonesia , where they call Nastar with pineapple filling . The knot cookies was cute , i didn’t have pearl sugar on hand , i just used the christmas sprinkles on it . And then in the morning i made these butter horns , with ground walnut filling , and ended the night with speculaas , spiced cookies with the shape of gingerbread man . Will post the recipes later on tonight .

Chocolate Hazelnut Cutout Cookies

I thought i started my christmas baking last night , i chose chocolate hazelnut cookies . I happened to have hazelnut on hand , i roasted them , you wouldn’t believe how yummy the smell of roasted hazelnut , esp. after having them in the food processor and have them finely grounded . The cookies were so buttery and yummy and after it has been cooled i spread some nutella on it , i love the cookies itself , and i also love it with nutella . I think this cookies is for everybody out there who loves nutella ! That would be me !! 🙂

Ginger chicken with root vegetables

I had a very small amount of time frame to spend in the kitchen today . So to make things quick , i decided to make this Ginger Chicken with Root Vegetables . They’re very simple and easy to make , just braised the chicken , i used chicken thighs , had lots of flavor of course , and i used the root vegetables , such as onion , ginger , celery and parsnips . Actually i never had parsnips , this was our first time trying parsnips , i figured they’re sweet .. from what i heard . They look like carrots , except parsnips are white , had about the same shape like carrot . And turned out when they’re cooked , they release this sweet juice .. The chicken that i cook on top of those root vegetables had a very sweet juice . Very good and easy one pot meal !

R2D2 Cake

Today we finished up our cake project , me and my husband that is . Our son birthday is tomorrow . And he has Star Wars birthday theme , he wants a R2D2 birthday cake . What a request !! LOL

So , couple of days ago we made the cakes , to freeze them , that way it will be easier to frost and also less job to do within 1 day . Made about 6 – 6 inches round cake , and also made the head too . But we ended up using just 4 cakes , i used 5 lbs of buttercream icing , as a glue for the fondant that goes all over the body and the head . For the arms , we used rice krispies . And frosted that too and then wrap them with the fondant . It was quite interesting decorating this cake . We really didn’t go into too much details , but i still think it looks pretty cute . My husband did an awesome job decorating this cake too , i think our son is so lucky to have a dad who’s willing to help with the birthday cake project !!

Flavored Meringue

Last spring i made a batch of these meringue and my son loves it . He’s been asking for it over and over and i always had something else to do … too busy doing this or doing that , or sometimes , just plain too lazy . But today , before i went to pick him up , i decided to take some eggs out , because i’d need it to come to a room temperature , although i could always put them in luke warm water for 30 minutes and they should be ready .

Anyway … before dinner i decided to make these meringue , they’re super easy , of course no flour needed , it’s meringue , it’s just sugar and egg whites . I added espresso powder to add the flavor , so it’s not only sweet , the only thing with this , it takes a while to make . The baking time is about an hour , but the cooling down period takes about 2 hours in the oven that’s been shut off . I am still waiting for this meringue to get done .. But i guess they’re worth it . I also used the pastry bag to make them into nice pretty little shapes instead of a dollop of meringue .. LOL , they’re pretty ,i can’t wait to have a bite of it .
