The name was <a href=\"https:\/\/tokooenmalang.com\/\">&#8216;Toko Oen&#8217;<\/a> and from the looks of it , it still the same from the outside  . This bakery is a dutch influence bakery , they are very famous . They had all kinds of pastry , bread , ice cream and sandwiches . Although i hardly had any of their sandwiches , my mom&#8217;s favorite item to get from this bakery was Roti Kismis . Which is Raisin Bread . It&#8217;s simple , i could always make it a big loaf of raisin bread , after all i just made a cinnamon raisin swirl bread yesterday and i usually make couple loaves of them to freeze , so when we are hungry for it , just let it thaw out . I decided to make this individual sweet bread with raisins . The basic sweet dough i used here is quite versatile , you can use it as a canvas for whatever filling you want . You can fill it with nutella , jam , preserves , or even savory such as sausage , bacon etc . My choice landed on raisins since i was intentionally hungry for that particular bread . <\/p>\n\n\n\n<p>This recipe also can be used to make cinnamon rolls . <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients :<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>397 grams all purpose flour ( about 14 oz ) <\/li><li>1\/2 tbsp kosher salt<\/li><li>3 tbsp sugar <\/li><li>2 1\/2 tsp active dry yeast <\/li><li>1 cup + 1 tbsp unsweetened almond milk ( feel free to use skim milk or low fat milk ) , luke warm <\/li><li>4 tbsp unsalted butter , room temperature<\/li><li>1 cup of raisins <\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image size-large\"><a href=\"https:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2021\/03\/20210326_141154-scaled.jpg\"><img decoding=\"async\" width=\"1024\" height=\"768\" src=\"https:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2021\/03\/20210326_141154-1024x768.jpg\" alt=\"\" class=\"wp-image-9438\" srcset=\"https:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2021\/03\/20210326_141154-1024x768.jpg 1024w, https:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2021\/03\/20210326_141154-300x225.jpg 300w, https:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2021\/03\/20210326_141154-768x576.jpg 768w, https:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2021\/03\/20210326_141154-1536x1152.jpg 1536w, https:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2021\/03\/20210326_141154-2048x1536.jpg 2048w, https:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2021\/03\/20210326_141154-1140x855.jpg 1140w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/a><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\">Directions : <\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>In a large bowl of standing mixer , dump all ingredients together except for the raisins . Use the dough hook attachment , start mixing and speed it up to speed 2 to knead the dough . <\/li><li>Keep kneading for a total 5-6 minutes , 2 minutes before the last , add the raisins to be mix in . <\/li><li>Take the dough out , shape into ball , seam side down . <\/li><li>Proof for almost 2 hours at room temperature . <\/li><li>Take the dough out , let it rest for 5 minutes before shaping . <\/li><li>I divide my dough into 16 equal pieces , about 50-55 grams each . Roll into a ball , place it on a parchment paper lined sheet , seam side down . Do the same for all of them , cover with plastic wrap <\/li><li>Proof for 2nd time for 60-75 minutes . <\/li><li>Brush with egg wash , sprinkle with sugar on top <\/li><li>Bake at 400 F , about 10-12 minutes . <\/li><li>Macros per serving 20C 3F 2P approx 115 calories<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Option 2 , instead of raisins , you can replace the raisins with semi sweet chocolate chip ( mini or normal size , normal you can roughly chop it )  , about 112 grams ( 4 oz ) , same instruction for everything else .
