Then as i was browsing the healthy cookbook ( i don&#8217;t do this quite often LOL ) , I came across a recipe that is called edamame succotash . As far as i know succotash is just a bunch of veggies put together , seasoned and served as a side dish .<\/p>\n<p>But i have never seen one that is with edamame .. but then again i wonder , why not ?? This is really good and very healthy for you , all the ingredients are healthy and it won&#8217;t make you feel bad eating it !!<\/p>\n<p>I served this with blackened catfish , the recipe for the blackened seasoning is <a href=\"http:\/\/www.oliviaskitchen.net\/?p=2054\">here<\/a>\u00a0.<\/p>\n<p><a href=\"http:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2013\/01\/edamame.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-medium wp-image-2379\" alt=\"edamame\" src=\"http:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2013\/01\/edamame-300x199.jpg\" width=\"300\" height=\"199\" srcset=\"https:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2013\/01\/edamame-300x199.jpg 300w, https:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2013\/01\/edamame.jpg 800w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><span style=\"font-size: medium;\">Direction :\u00a0<\/span><\/p>\n<p>1\/2 of red bell pepper , chopped<\/p>\n<p>1\/2 small sweet onion , chopped<\/p>\n<p>2 garlic cloves , minced<\/p>\n<p>2 roma tomatoes , seeded and chopped<\/p>\n<p>3 ears of sweet corn<\/p>\n<p>1 cup of edamame or more if you&#8217;d like<\/p>\n<p>2 slices of bacon ( replace with turkey bacon if you&#8217;re feeling really healthy )<\/p>\n<p>kosher salt and black pepper<\/p>\n<p>olive oil<\/p>\n<p>1. Cook the corn , leave the corn unhusked , soak for about 15 minutes in a deep pan . Then preheat oven to 375 F , then when it&#8217;s ready , place the corn in a shallow baking dish , and bake about 25 minutes . Take it out , let it cool , before peeling everything . Then scrape off the corn with knife in a large bowl .<\/p>\n<p>2. Heat olive oil , then add garlic onion , red bell pepper and corn , cook for few minutes until veggies are slightly tender . Then add the bacon , and salt and pepper .<\/p>\n<p>3.
