Period .. unfortunately they come only during the holidays .. i wish we can have more sweet potatoes even during regular days . I am more into sweet potato than regular potatoes . This particular recipe , almost tastes like a dessert than a side dish . I think it&#8217;s because of the pecan brown sugar topping , although without the topping i can eat it just fine !!<\/p>\n<p><span style=\"font-size: medium;\">Direction :\u00a0<\/span><\/p>\n<p>3 large sweet potatoes , about 4-5 cups of cubed sweet potatoes<\/p>\n<p>Add water and bring to boil , until it&#8217;s all cooked , and soft enough to be mashed . Once it&#8217;s done , drain and mash . Then add :<\/p>\n<p>2 large eggs<\/p>\n<p>1\/2 cup of sugar<\/p>\n<p>4 tbsp. of softened butter , unsalted<\/p>\n<p>1\/2 tsp. of salt<\/p>\n<p>1\/2 cup of milk<\/p>\n<p>1\/2 tsp. of vanilla extract<\/p>\n<p>Mix them all well , pour into casserole dish . Then add the topping :<\/p>\n<p>1\/2 cup of brown sugar<\/p>\n<p>1\/3 cup of flour<\/p>\n<p>3 tbsp. butter , softened<\/p>\n<p>1\/2 cup of chopped pecans<\/p>\n<p>Mix flour and brown sugar , then mix the butter , and add the pecans .
