I think they call it rustic because there is really no rule to fold it , doesn’t take much time , like any other pastry or pie stuff . Just dump the fruit , fold the dough and throw them in the oven . Very easy and simple !! Especially when you don’t have much time to spend during the day to make a yummy dessert , this would be a good choice . Just make the crust ahead of time though ,because it needs to chill for at least an hour , just like any other pie crust .You can serve this warm with vanilla ice cream or just serve it as it is . No problem !

You need for the crust :

1 cup of all purpose flour

2 tbsp. of sugar

1/4 tsp. salt

1 stick of very cold unsalted butter , diced

2 tbsp. ice cold water

In a food processor , pulse the flour , sugar , salt together , then add the butter , pulse until coarse mixture reached , then add the cold water , pulse just until the dough comes together , don’t let it come together into a big ball .
