I love it .. it&#8217;s easy , yummy and quick . I have to say although you have to cook the rice ( not the instant one ) in the pot , it didn&#8217;t take long for me , probably about good 20 minutes . It could have been spicier , next time , i have to throw in more cayenne pepper , i didn&#8217;t have them on hand , but i replaced them with serrano peppers , but didn&#8217;t matter much . In a large pot or dutch oven , heat up olive oil , then add the sausage , brown about 7-8 minutes , then add the onion , celery , red and green pepper , salt and pepper , cook about 5 minutes . Then add garlic , cook for 2 minutes . Add tomatoes , and cayenne pepper . Stir in the rice , and then mix well . Add 4 cups of shrimp stock . Cook on low medium heat , cover , stirring often , to prevent burn on the bottom of the pot .
