Since we live in Texas now , it seems like corn is available any time of the year , fresh corn is the one i am talking about . This corn chowder is so easy and quick to make , next time i am thinking to add some lobster or crab meat in there . Would be even better !! But if you don&#8217;t have the lobster , just plain corn chowder will still work really good !!<\/p>\n<p><a href=\"http:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2012\/02\/corn-chowder.jpg\"><img decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-1239\" title=\"corn chowder\" src=\"http:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2012\/02\/corn-chowder-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<p>You need :<\/p>\n<p>2 tbsp. of olive oil<\/p>\n<p>1 medium onion , diced<\/p>\n<p>4 garlic cloves , minced<\/p>\n<p>1\/4 cup of all purpose flour<\/p>\n<p>4 cups of vegetable stock<\/p>\n<p>2 cups of seafood stock ( if you use lobster ) or just 2 cups of chicken stock<\/p>\n<p>2 idaho potatoes , diced<\/p>\n<p>2 cups of heavy cream<\/p>\n<p>6 ears of corn<\/p>\n<p>bunch of parsley<\/p>\n<p>salt and pepper<\/p>\n<p>In a pot , heat the olive oil , add onion and garlic , cook about 8 minutes on medium heat , then add flour , mix well , cook for a minute . Then add the vegetable and seafood stock a little bit at a time , while stirring with a whisk , to prevent lumps . Bring to a boil , then add heavy cream and potatoes , boil hard for 10 minutes until potatoes are done . Then add the corn , simmer on low for 15 minutes until the corn is done . Season to taste with salt and pepper .
