This one , although it has no meat , it tastes really yummy . I think this was pretty easy dinner for weekdays and quick too . You can always add mozzarella at the end of cooking or just don&#8217;t use it at all if you&#8217;re a vegan !<\/p>\n<p><a href=\"http:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2011\/09\/rigatoni-with-tomato-and-eggplant.jpg\"><img decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-1167\" title=\"rigatoni with tomato and eggplant\" src=\"http:\/\/www.oliviaskitchen.net\/wp-content\/uploads\/2011\/09\/rigatoni-with-tomato-and-eggplant-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<ul>\n<li>1 ripe eggplan<\/li>\n<li>olive oil<\/li>\n<li>2 <a href=\"http:\/\/www.food.com\/library\/garlic-165\"> garlic cloves<\/a>, peeled and sliced<\/li>\n<li>1 <a href=\"http:\/\/www.food.com\/library\/onion-148\"> onion<\/a>, peeled and finely chopped<\/li>\n<li>2 (14 ounce) cans of good-quality <a href=\"http:\/\/www.food.com\/library\/plum-tomato-119\"> plum tomatoes<\/a><\/li>\n<li>1 tablespoon balsamic vinegar<\/li>\n<li>1 pinch of sea salt &amp; freshly ground black pepper<\/li>\n<li>2 <a href=\"http:\/\/www.food.com\/library\/chile-pepper-323\">fresh chili peppers<\/a> or 1 dried chili, chopped<\/li>\n<li>1 bunch <a href=\"http:\/\/www.food.com\/library\/basil-317\"> fresh basil<\/a>, leaves ripped and stalks sliced<\/li>\n<li>4 tablespoons <a href=\"http:\/\/www.food.com\/library\/heavy-cream-361\"> heavy cream<\/a><\/li>\n<li>1 lb <a href=\"http:\/\/www.food.com\/library\/pasta-273\">rigatoni pasta<\/a> or 1 lb <a href=\"http:\/\/www.food.com\/library\/pasta-273\"> penne<\/a><\/li>\n<li>7 ounces cow&#8217;s milk <a href=\"http:\/\/www.food.com\/library\/mozzarella-746\"> mozzarella cheese<\/a><\/li>\n<li>1 piece <a href=\"http:\/\/www.food.com\/library\/parmesan-cheese-467\"> parmesan cheese<\/a>, for grating<\/li>\n<\/ul>\n<p>1.Cut up the eggplant into 1\/2 inch dice , chopped the onion and minced the garlic . Heat up the olive oil , add the eggplants , stir quickly , and cook for 7 minutes ,\u00a0 medium heat , keep stirring . Add onion and garlic , cook until it has color , and add salt and pepper .<\/p>\n<p>2. Add the balsamic vinegar and plum tomatoes , and the stalk of basil that has been shopped . Bring to boil and cover , simmer for 15 minutes .Add the chilis before simmering them .<\/p>\n<p>3. Cook the pasta , reserve a lil of the water , and drain , return to the pot , with lil olive oil and the pasta water . Add into the sauce .
